Winemaking
En barrica de roure francès nou d'Allier durant 22 days at 19ºC. Secondary fermentation of 35 days at 16ºC. Cold stabilised, clarified in the bottle.

Winemaker's notes
This is a very special cava, pioneer in the use of Pinot Noir as a variety for white wine. The base wine has been fermented in new French barrels, giving it special characteristics compared to traditional cavas. It was aged in our cellars at a constant 16ºC, and manually clarified in wooden racks. It was also disgorged and labelled by hand. It will be in optimum condition for the 18 months after disgorgement. We recommend serving it at 6°C.
